Founded in 2024, Kōhī is a rejection of commodity roasting. We partner directly with 4 farms globally to bring transparent, high-clarity coffee to Tokyo.

Coffee cherry farming

The global coffee supply chain is fundamentally broken. Between the farmer picking the cherry and the barista pouring your cup, beans often sit in shipping containers, massive warehousing silos, and grocery store shelves for up to nine months.

By the time it reaches you, the delicate volatile compounds that give Ethiopian beans their floral jasmine notes, or Kenyan beans their vibrant blackberry acidity, have oxidized and vanished.

The Direct Trade Difference

We bypass the auction houses. We pay our farming partners a minimum of 300% over the Fair Trade commodity baseline. In return, we get absolute first choice of their harvest. Our beans are flown air-freight, stored in climate-controlled vaults in Shibuya, and roasted exclusively on the day you order.
